Álvaro Ariza's recipe for Soret


Spanish omelette with onion recipe..




Ingredients:
  • 500 g potatoes, peeled and thinly sliced.
  • Olive oil.
  • 6 eggs.
  • Salt.
  • 1 onion.
  • A pinch of yeast.

Steps:

  • Put the pan over medium heat with oil.
  • Add the potatoes and onion previously seasoned, then fry slowly, turning them occasionally.
  • Beat the eggs, give them salt and put the pinch of yeast.
  • Once fried potatoes with onion, remove with a slotted spoon to a plate. They should be well drained of oil.
  • Then, mix potatoes and eggs.
  • Put the pan over medium heat with a couple tablespoons of oil.
  • When it is hot, the mixed potatoes and eggs are incorporated.
  • Separate the egg constantly from the edge of the pan to prevent sticking.
  • Once the Spanish omelette is golden underneath, flip it with a plate and add back to the pan with a few drops of oil until done finish.
